Happy Wednesday HUMP DAY !!!! 

This is kind of Random but love this black and white pictures of a dandelion. I found it on Pinterest and it caught my eye.

Breakfast Cookie Recipe, these are so yummy !! I wasn't going to eat one but someone at work brought one to my desk from Sasha and I loved it. 


Oatmeal Chocolate Pecan Breakfast Cookies
Ingredients:
1/2 cup reduced-fat canola margarine (8 grams fat per tablespoon), with plant sterols, if desired ( you may also substitute applesauce)
3/4 cup dark brown sugar, firmly packed
1/2 teaspoon salt (optional)
2 teaspoons vanilla extract
1 large egg (use a higher omega-3 brand if available) ( or 3 egg whites)
1/4 cup egg substitute
1 cup whole-wheat flour
1/2 cup unbleached white flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground clove
1 1/2 cup 100% whole grain rolled oats
3/4 cup walnut or pecan pieces (coarsely chopped can also be used)
1 cup high-cocoa bittersweet or semisweet mini or regular chocolate chips
Directions:
1. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper or coat nonstick cookie sheets with canola cooking spray.
2. In large mixing bowl, beat margarine, brown sugar, salt (if desired), and vanilla with electric mixer until well blended and fluffy (about 2 minutes), scraping side of bowl halfway. Beat in egg, then egg substitute.
3. In medium bowl, combine flours, baking soda, cinnamon, nutmeg, and clove. Add flour mixture all at once to margarine mixture and beat on low speed just until mixed. With wooden spoon, stir in oats, nuts, and     chocolate chips.
4. Use a slightly heaping cookie scoop to drop dough balls (about 3 tablespoons) onto prepared cookie sheets; press down on the balls slightly if you want flatter cookies.
5. Bake 10 minutes or until lightly golden. Remove cookies from oven, cool on wire rack. Store in an airtight container.
Yield: 22 breakfast cookies
Nutrition Information: Per serving:194 calories, 5 g protein, 26 g carbohydrate, 7.5 g fat, 2.6 g saturated fat

Sara and I has so much Fun as Paces this past weekend for the Park to Park 1/2 Marathon, we paced the 9:00 minute mile and we rocked it. We were a little nervous about staying on pace but with the help of watches and GPS we were almost right on !!!

For so many people, breakfast is a low priority or not a priority at all. September is National Breakfast Month and it’s the perfect time for you to start taking care of you! IF you think you are saving time or cutting calories by skipping breakfast, think again.  Making a healthy breakfast part of your morning can help you get on track to make healthier choices through your day, increase your physical activity and help curb overindulging on convenience foods. A healthy breakfast replenishes your body and can have a positive impact on your overall health. Check out the tips below on why a healthy breakfast is important and how to make it happen. 

Skipping Breakfast and Weight Gain
Skipping breakfast may increase your chances for weight gain. Eating breakfast can help reduce hunger and overeating.  Skipping breakfast may leave you feeling famished, which may lead to temptations such as candy, chips and other foods from the vending machine or break room area.  When you are at the grocery store, try buying portable breakfast items such as fruit, low-fat yogurt, and whole grain breakfast or granola bars for when you are on the go.

The Health Benefits of Breakfast
 Research has shown that those who eat breakfast regularly are more likely to have a healthier overall diet.  Healthy breakfast options include whole grain breads and cereals, low-fat protein and fruits and vegetables. 
If you are one of the many people who skip breakfast, start eating breakfast this month and make it a routine.  Plan ahead to eat breakfast, this means deciding the night before so you will save time in the morning.   Try some of the healthy breakfast options below.  Do you have a favorite breakfast recipe? 

Oatmeal Cookie Oats
Stir together 1/3 cup plain, uncooked rolled oats, ½ cup skim milk (or dairy alternative), ½ cup nonfat plain Greek yogurt, ¼ tsp. cinnamon, 1 tsp. chia seeds and 1 tbsp. raisins, continue stirring until ingredients are well combined, cover and place in the refrigerator  overnight. In the morning top with t tsp. chopped walnuts and/or stir in a small mashed banana.

Mochanana Smoothie (need a little caffeine kick?)
Blend 1 large frozen banana (remove the peal before you freeze) with 1 serving of your favorite chocolate protein powder, 2 tsp. ground flax seeds, and 1 cup brewed coffee and 2-3 ice cubes. If you would like a thicker consistency, add more ice cubes or try adding nonfat plain Greek yogurt.
